Brassica oleracea is a plant species – the one pictured is not a flower but a vegetable that consists of undeveloped white florets attached to a single stem that form a compact, cabbage-like head, called a curd.
Roast it. Toss it with olive oil, salt, pepper, and any other desired seasonings and spread it out on a baking sheet without overcrowding it! Bake it at 425° for about 35 minutes. At this point it will get crispy on the underside and almost caramelize. It's the most addictive way to make it.
